new favorite recipe...

 Mexican Chicken


INGREDIENTS:
3-4 boneless chicken breasts
1 can cream of chicken
1 can cream of mushroom
1 can of rotel
2-3 cups of shredded cheese (cheddar or whatever you'd like)

DIRECTIONS:
boil 3-4 boneless chicken breasts
cut into small bite-size pieces

mix cooked chicken with 1 can cream of chicken, 1 can of cream of mushroom, 1 can of rotel.

place 4-5 small tortilla shells (I used flour shells, but corn works too) into a baking pan/dish. I used a 9x13 pan.

put chicken mixture on top of tortilla shells.

sprinkle shredded cheddar or Mexican shredded cheese on top
bake at 350 for 30 minutes.

I put a little cayenne pepper in my chicken mixture, because I like a little kick. We made 3 chicken breasts and it was more than enough for just 2. Great recipe for a potluck or family function or just because. :):)
